This is a washed-process coffee of the Aji variety from La Fortuna Farm.
Aji is a rare variety grown only in this region, believed to be an Ethiopian wild heirloom variety that was introduced here by chance.
Named after the unique fruity aroma reminiscent of chili peppers, it is characterized by a distinct floral and spicy scent.
This coffee offers a unique charm with its variety-derived floral and spice notes, a clean fruitiness from the washed process reminiscent of mandarin orange, and a deep, sweet flavor profile akin to blackberries and nectarines.

About the Farm
La Fortuna means "luck" in Spanish. Blessed with exceptional terroir, the farm's Geisha lots have placed in the Cup of Excellence three times.
They participate in the Kima Coffee Colombia project, working to cultivate various varieties, improve processing techniques, and enhance labor conditions to ensure the sustainable production of high-quality coffee.
The "Aji" variety used for this lot is a highly rare cultivar grown only by producers in the Pitalito area of Huila.
Aji means "chili pepper" in Spanish, a name given due to the unique spicy aroma that emanates from the cherries.
Initially thought to be a mutation of the Bourbon variety, genetic analysis has revealed a high probability that it is an Ethiopian wild heirloom variety.
While it remains a mystery how these wild heirloom seeds were planted in this part of Colombia, the variety is steadily gaining recognition as one unique to this region.
